Breakfast Cobbler

It’s Saturday morning after a night out at the courts and there’s no way you’re knocking back a green juice and hitting the Davis Center. Luckily, we have the perfect guilt-free hangover remedy right here. Breakfast. Cobbler. It’s the berry cobbler your mom makes during the holidays with a healthy twist, so you can somehow call it ‘breakfast’.
With all the probiotics in yogurt, plus the antioxidant-rich berries and much needed carbs from the granola, this cobbler will become your new favorite healthy indulgence! It goes best with a fresh cup of coffee, a few bites of leftover Domino’s pizza, and Asher Roth’s “I Love College” playing in the background.
INGREDIENTS:
1 cup fresh or frozen mixed berries
½ cup of your favorite granola
Greek yogurt
Honey
DIRECTIONS:
Preheat the oven to 350 degrees F.
Place the berries in a ramekin and top with your go-to granola. Bake until the berries are hot and bubbling, about 15-20 minutes for fresh berries and 20-25 minutes for frozen ones. If you’re using frozen berries, I recommend waiting to put the granola on top until the berries have cooked for about 15 minutes already. Top with greek yogurt and a drizzle of honey.
